Course Description

This qualification is aimed at you if you, if you are looking to further your learning to become an all rounded professional chef. By studying this course you will gain knowledge and advanced skills required to become a professional chef. At level 3 you will undertake topics around gastronomy, advanced skills and techniques in producing dishes, using your supervisory skills and producing pastry products. You will further your learning by undertaking practical tasks in the kitchen covering preparation activities such as preparing and cooking 3 course meals for example, for lunch or dinner as well as events. As a College we work with local employers who will contribute to the knowledge and delivery of training. Employers will provide demonstrations and talks on the industry. You will also be given the opportunity to visit restaurants of all types from gastro pubs to Michelin star establishments. Where possible work placements will also be provided by the employers.

Entry Requirements

Level 2 Qualification in Professional Cookery or relevant Industrial Experience


To achieve the 7100-85 Level 3 Diploma in Advanced Professional Cookery, learners must achieve 100 credits from the mandatory units, as well as completing the practical Assessment Synoptic Unit. You will study topics including: Principles of Food Safety Supervision; Supervisory Skills in the Hospitality Industry; Exploring Gastronomy; As well as developing Advanced Practical Skills and Techniques in the following areas - Vegetable and Vegetarian dishes, meat dishes, poultry and game dishes, fish and shellfish, producing dough and batter products, Petit fours, Paste products, hot, cold and frozen desserts as well as Cakes, sponges and biscuits. It is a strong qualification that will provide you with the skills that you need to enter a professional kitchen.

Work Experience

Work Experience is an essential part of this course as it gives you the opportunity to develop skills learnt at College to enable you to acquire your own style and passion for different aspects of the industry. Ideally you would carry out a minimum of Two Industrial Placements over the two years to give you the opportunity to experience differing aspects of the vast Industry of Hospitality. Placements are usually organised by yourself however we are here to help and guide with our existing employer contacts.


By undertaking this qualification you will then have the required all round knowledge to enter employment whether on the pastry side or the production side and be an all round valuable member of the team. You can progress into employment and undertake an apprenticeship.
