Course Description

This qualification covers a very wide range of areas related to the skills and knowledge required for preparing learners who want to obtain the skills to progress into confectionary and cake decorating Industry. They allow learners to learn, develop and practice the creative skills required for career progression in the industry. The following areas that can be covered within this qualification:

  • Exploring design ideas and sampling techniques in sugar mediums
  • Royal icing techniques
  • Decorate mini cakes with sugar paste
  • Decorate a gateaux
  • Create a sugar floral display
  • Decorative techniques with chocolate coverings
  • Creating decorated pastillage plaques
  • Decorating cupcakes and cake pops

This course will run for 30 weeks, 3 hours per week on Tuesday's 9am - 12pm, starting Tuesday 7th September 2021


Level 1 Certificate in Sugarcraft

Entry Requirements

Mainly an interest in creative design and cake decoration - prior experience would be advantagesous but not essential. Learners will need to purchase some specialist equipment.


To achieve the Level 1 Certificate in Sugarcraft, learners must achieve a minimum of 14 credits, 6 credits must come from the mandatory units and a minimum of 8 credits must come from the optional units.

Work Experience

Work experience is not essential as part of this course


This qualification could lead to jobs such as:

  • Junior assistant to the designer in a specialist cake shop of bespoke cakes Trainee in the use and promotion of specialist cake decorating equipment
  • Trainee in celebration cake production
  • Trainee in making specialist cake equipment
  • Junior assistant to a pastry chef
  • Trainee chocolatier

The learner could progress onto an apprenticeship or other qualifications such as:

  • Level 2 Certificate in Sugarcraft
  • Level 2 Diploma Sugarcraft
